Potassium citrate is a transparent crystal or white powder, odorless, salty spicy cool, easy deliquescence. It is used as buffer, chelating agent, stabilizer, antioxidant, emulsifier and flavoring agent in food industry. It can be used for emulsification of milk and dairy products, jelly, jam, meat, canned hydrogel snacks, cheese, preservation of citrus, etc.
