Sodium citrate is a colorless crystal or white crystalline powder, odorless, salty spicy cool. It's stable at room temperature, slight deliquescence in moist air and with weathering resistance in hot air. Heated to 150 degrees Celsius lost crystal water. Soluble in water, insoluble in ethanol, the pH value of 5% aqueous solution was 7.6~8.6.

Food Industry

 

Sodium citrate used in cool drinks can alleviate sour taste and improve taste. Adding this product in brewing can promote saccharification, with a dosage of about 0.3%. Sodium citrate can be used as emulsifier and stabilizer, with a dosage of 0.2%~0.3%. This product can also be used as an anti-rancidity agent for dairy products, a tackifier for processed cheese and fish products, and a sweetness corrector for food.
