Ethyl vanillin is white to micro squamous yellow crystals or crystalline powder, a unique sweet chocolate aroma and strong vanillin aroma, aroma is 3-4 times to the vanillin. In case of light and air it can be gradually oxidized, and appears acidic water solution. Its melting point is 78 degrees Celsius, boiling point 285 degrees, slightly soluble in water, soluble in ethanol, ether, glycerol, propylene glycol, chloroform and hydrogen peroxide solution.
