6. Sodium alginate is white or yellowish powder, which is almost odorless and tasteless. It is soluble in water, but insoluble in organic solvents such as ethanol, ether and chloroform. Dissolve in water to form viscous liquid, and the pH value of 1% aqueous solution is 6-8. When pH=6-9, viscosity is stable, and when heated above 80℃, viscosity decreases. Sodium alginate is nontoxic, with LD50>5000mg/ kg.

7. Sodium alginate (C6H7O6Na)n is mainly composed of sodium alginate, which is a copolymer of β-D- mannuronic acid (M unit) and α-L- guluronic acid (G unit) connected by β-1,4- glycosidic bond and composed of GM, MM and GG fragments with different proportions. 

8. Sodium alginate is hygroscopic, and the amount of moisture in equilibrium depends on the relative humidity. Dry sodium alginate is quite stable when stored in a well-sealed container at 25℃ or below.
