White or near white crystalline powder, no odor. Soluble in water, glycerin, propylene glycol, its aqueous solution does not change at 120 degrees C. It’s neutral or slightly alkaline. Slightly soluble in ethanol and acetone, light resistance, good heat resistance. The water solution remained stable when heated at 120 DEG C for 2 hours.

Sodium dehydroacetate has broad-spectrum antibacterial effect, strong antibacterial ability, wide antibacterial range and no influence of pH value. It has good antibacterial effect in acidic, neutral and alkaline environments, especially strong inhibitory ability on mold, yeast and bacteria, low effective concentration, good light and heat resistance, and will not decompose and evaporate with water vapor during food processing. Tests show that sodium dehydroacetate has almost no toxic and side effects, high safety, and no abnormal odor in food use, thus preventing the spoilage of products and obviously prolonging the shelf life.
