Sour taste and sour strength is similar with L-.tartaric acid. The melting point is 205-206℃. Water soluble 18.4g/100ml, 20 DEG C), slightly soluble in ethanol. 0.3% aqueous solution of pH 2.4.

Food Industry

 

Tartaric acid is an excellent sour agent, its acidity is 1.2-1.3 times that of citric acid, and its flavor is unique. According to the hygienic standard of food additives in China, it is mainly used in combination with citric acid, malic acid, etc., and can be used in beverages, canned food, jam, candy, etc. Because tartaric acid, as raw material of baking powder, has the characteristics that other edible organic acids do not have, it can also be used as chelating agent, antioxidant synergist, flavoring agent and quick-acting leavening agent in some occasions.
